Easy Recipes: Roasted Chicken, Potatoes, Asparagus and Lemon Recipe
Such a quick and easy dinner recipe that looks and tastes delicious. My husband likes to add Ranch Dressing to his. What can I say, he eats Ranch on everything.

Ingredients
- 2 pounds yellow potatoes, skins on, cut into 1" pieces
- 6 Tbls butter, melted
- 1 Tbl olive oil
- Coarse salt and ground pepper
- 3 skinless, boneless chicken breasts
- 1 bunch asparagus (1 pound), trimmed and cut into 2-inch pieces
- 1 lemon, cut into 8 wedges
- 2 tsp dried thyme
Instructions
- Preheat oven to 475 degrees.
- Place potatoes and half the butter and olive oil in a roasting pan; toss to coat, then season with salt and pepper.
- Roast, tossing once, about 10-15 minutes (just until potatoes start to turn golden)
- Cut each chicken breast into 3 pieces. Season all of the pieces salt and pepper. Place the chicken on top of the potatoes
- Roast for about 20 minutes or until the chicken begins to brown.
- Toss the cut asparagus with the remaining melted butter. Salt and pepper.
- Add the asparagus, lemon, and thyme to the roasting pan.
- Roast until the asparagus is tender (5-15 minutes) and chicken is opaque
- Serve the chicken, vegetables, and lemon drizzled the juices from the pan.
