Slow Cooker Recipe: Ham and Lentil Soup

Yield: 10 1-cup servings
Ingredients
  • 1 cup dried lentils (rinsed and picked over)
  • 3 celery stalks, thinly and evenly sliced
  • 3 carrots, thinly and evenly sliced
  • ½ small white onion, finely chopped
  • 2 cloves garlic, minced
  • ½ tsp dried basil
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • 1 bay leaf
  • ¼ tsp black pepper
  • 32 oz low sodium chicken broth or 32 oz water and 4 tsp Better than Bouillon - Chicken
  • ¼ cup tomato sauce
  • 2 cups cooked ham, cubed
Instructions
  1. Combine all ingredients in slow cooker. Cover and cook on high until lentils are cooked - about 3 hours (on low expect 7-8 hours) (in my NewWave 6-in-1 Multipcooker it was done in 2 hours). Discard the bay leaf before serving.
