Black Bean and Guacamole Pita Sandwich

  • 1 cup canned black beans, rinsed, drained
  • ½ cup cherry tomatoes, chopped
  • 4 Tbsp prepared salsa
  • 4 Tbsp prepared guacamole
  • 2 whole wheat pita bread
  • 4 romaine lettuce leaves
  • 4 Tbsp. shredded cheddar cheese
  1. In a bowl medium bowl, mix the black beans, cherry tomatoes, salsa, and guacamole.
  2. Slice each pita in half to make a pocket and toast in the toaster or in the oven broiler
  3. Stuff each pita with the lettuce and black bean mixture.
  4. Sprinkle with cheese.
