Black Bean and Guacamole Pita Sandwich
- 1 cup canned black beans, rinsed, drained
- ½ cup cherry tomatoes, chopped
- 4 Tbsp prepared salsa
- 4 Tbsp prepared guacamole
- 2 whole wheat pita bread
- 4 romaine lettuce leaves
- 4 Tbsp. shredded cheddar cheese
- In a bowl medium bowl, mix the black beans, cherry tomatoes, salsa, and guacamole.
- Slice each pita in half to make a pocket and toast in the toaster or in the oven broiler
- Stuff each pita with the lettuce and black bean mixture.
- Sprinkle with cheese.
