Low Calorie Recipes: Individual Apple Crisp Recipe

This is a very tart apple crisp which is perfect with a dollop of TruWhip (sold at Albertson's and Whole Foods as well as other markets in the frozen food aisle). If you won't be topping it, you may want to increase the granulated sugar - this will of course increase the calories.
Yield: 8-6oz servings
  • 3 medium fresh apple(s), Granny Smith, cored and sliced uniformly (about ⅛” at the thickest part) – if organic leave the skins on
  • ¾ Tbsp fresh lemon juice
  • 2 Tbsp sugar, granulated
  • ¼ cup dried cranberries
  • ¾ cup Multi-grain hot cereal or old-fashioned oatmeal (uncooked)
  • 1-1/2 Tbsp packed brown sugar
  • 3 Tbsp butter (room temperature)
  • 2 tsp ground cinnamon
  • ½ tsp freshly ground nutmeg
  1. Preheat oven 350
  2. Wash, core, and thinly slice apples (peel if not organic). Chop for ramekins
  3. Drizzle lemon juice and sugar over apples; mix to coat evenly; set aside.
  4. Combine grain, brown sugar, butter, cinnamon, and nutmeg.
  5. Toss the apple mixture to incorporate any liquid that's accumulated; divide between 8-6oz ramekins
  6. Press down
  7. Divide topping between ramekins - press into apples
  8. Bake at 350 for approximately 25-30 minutes or until apples are tender.
  9. Top with a dollop of TruWhip
