Cranberry Spice Cake

This cake is made with reduced-sodium baking powder and can be made with any of the fruits listed below.

  • 1 cup dried fruit (cranberries, figs, dates or citron)
  • cup chopped walnuts, almonds or pecans
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cloves
  • ¾ cup water
  • ¾ cup shortening
  • 1 ½ cups light brown sugar
  • 3 eggs
  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 5 teaspoons Rumford Reduced Sodium Baking Powder
  • 1 cup milk
  • 1 teaspoon vanilla
  1. Preheat oven to 375 degrees F; prepare a tube pan by spraying with cooking spray and dusting with flour
  2. Rinse dried fruit and dry on a towel. Add spices and water and boil 3 minutes, stirring constantly; cool.
  3. In a separate bowl cream shortening and sugar until fluffy. Add eggs, and mix well.
  4. In a separate bowl combine dry ingredients, mixing thoroughly. Add to creamed mixture, alternating with the milk, until all is combined and mix until smooth. Fold in vanilla and fruit mixture.
  5. Pour into prepared tube pan and bake for 70 to 80 minutes.
  6. Makes 12 servings.
