Maple Oatmeal Cookies with Raisins and Flax Seeds
- ¼ c packed light brown sugar
- ¼ c granulated sugar
- 4 Tbls butter, softened
- 1 egg
- ¾ c all-purpose whole wheat flour
- 1 tsp imitation maple extract (or 2 real maple extract)
- ¼ tsp salt
- ¼ tsp baking powder
- ½ tsp baking soda
- 2 Tbls ground flax seeds
- 1 c old fashioned rolled oats
- 1 cup raisins (or dried cranberries)
- Preheat oven to 350 degrees Fahrenheit
- In a large mixing bowl, cream the butter and sugars until creamy. Add the egg and stir until incorporated.
- Add flour, salt, baking powder, baking soda, and ground flax seeds. Mix on low for about 30 seconds.
- By hand, scrape down the sides and then add the oatmeal and raisins. Stir by hand just until incorporated.
- Drop dough by teaspoon onto cool, dry cookie sheet (or use a 1" cookie baller), about 2" apart.
- Bake for 11 minutes or until brown.
- Remove from oven and allow to rest for two minutes then remove to a cooling rack.
- Makes 18 1" cookies
