Baby on the way? Stock the freezer with foods that you can heat and eat for the first few months when mom and dad are lucky if they have time to shower let alone make a meal. Freezer cooking is also a great way to stock up on basics for breakfast for the family. It lets you create options for your family that they’ll love. Don’t like salsa? Leave it off. Prefer bacon? No problem, substitute it. Want a larger serving? Eat two or use bigger tortilla shells.
Breakfast Sausage Burritos – Easy Freezer Cooking Recipe
This recipe can be easily doubled or tripled. If you’re making a large batch, cook the sausage in stages. Overcrowding the pan will result in the pork steaming instead of browning. We wrap the assembled burritos first in natural paper sandwich bags that can stay on the burritos while warming them in the microwave. Then the individually wrapped burritos are stored in a large freezer gallon bag which we label with the use by date.
I should also note that buying a block of cheese and shredding it yourself not only saves you a lot of money (check out the price per pound of pre-shredded cheese vs. a block – it’s shocking! Of course, if you have a heavy duty food processor it’s fast and easy to do it yourself), but it also mean better melting. That’s because shredded cheese is processed with an anti-caking agent to prevent it from clumping, but that same chemical also keeps it from melting well.
- 1 lb ground breakfast sausage
- 12 large eggs
- ¾ c milk
- ½ tsp salt
- ⅛ tsp pepper
- 15 6" flour tortillas at room temperature
- 1 c prepared salsa
- 1 c shredded cheddar or Mexican blend cheese
- In a large skillet over medium heat, cook the sausage until browned. Pour off any accumulated grease.
- Meanwhile, whisk the eggs, milk, salt and pepper until combined.
- Add to the sausage and cook for 5 minutes stirring the eggs to cook them evenly, but don\\'t brown them. Undercook just slightly - they'll continue to cook after you take them off the heat.
- Remove the pan from the heat and allow to cool slightly.
- Assembly
- Evenly distribute the sausage and egg mixture among tortillas. Top with salsa and cheese. Fold tightly into a burrito shape and wrap tightly in foil or plastic wrap (we use natural unwaxed bags which can go right into the microwave). Store the individually wrapped burritos inside a large gallon freezer bag and label for use within three months from today's date.
- To Eat:
- Cook from frozen - 45 seconds to 1 minute in the microwave or 5-7 minutes at 350 F in a toaster oven.

I have been wanting to make some breakfast burritos to freeze. To often I resort to eating breakfast in our hospital cafeteria where I work. If I had something pre-prepped that I could grab and go it would be great.
wow, I’m interested in try this. I love any meal that makes my life easier. Thanks for the info
I’ve never tried freezer meals for breakfast. Looks like a great recipe. Thanks!
We are currently in a breakfast rut. I like to have protein as part of breakfast because it helps give energy longer. These look delicious and the perfect way to change it up in my kitchen.
I like that these can be made ahead of time. They will be a great addition to our family Christmas breakfast we host each year for the entire extended family.
I have made these before and they were a super hit. I wonder if I shared my recipe on my blog, can’t recall. I did make two batches though, one for the picky eater and one set for those who would eat breakfast burritos with green peppers, sausage, onions in it! Such a great way to make a quick breakfast on a budget.
That looks fabulous. I have noticed that shredding your own cheese was better. Never knew about what they use in pre shredded.
Oh this is awesome. Recipes like this are great when you’re meal planning. This sounds delicious!
I love this, it looks so yummy. What I love even more is that you can make this in advance and freeze and take out to eat on those crazy mornings when I’m running late and don’t have time to make breakfast!
Ooh, I need these! I have to go grocery shopping now!! DROOLING!!
I love breakfast burritos! They are one of my favorite breakfasts.
This was absolutely made for me! Between my blog and my family, I have next to no time for cooking. Thanks!
