Freezer cooking is also a great way to stock up on basics for breakfast for the family. It lets you create options for your family that they’ll love. Don’t like salsa? Leave it off. Prefer bacon? No problem, substitute it. Want a larger serving? Eat two or use bigger tortilla shells.

Breakfast Sausage Burritos – Easy Freezer Cooking Recipe

This recipe can be easily doubled or tripled. If you’re making a large batch, cook the sausage in stages. Overcrowding the pan will result in the pork steaming instead of browning. We wrap the assembled burritos first in natural paper sandwich bags that can stay on the burritos while warming them in the microwave. Then the individually wrapped burritos are stored in a large freezer gallon bag which we label with the use by date.

I should also note that buying a block of cheese and shredding it yourself not only saves you a lot of money (check out the price per pound of pre-shredded cheese vs. a block – it’s shocking! Of course, if you have a heavy duty food processor it’s fast and easy to do it yourself), but it also mean better melting. That’s because shredded cheese is processed with an anti-caking agent to prevent it from clumping, but that same chemical also keeps it from melting well.

Ingredients
  • 1 lb ground breakfast sausage
  • 12 large eggs
  • ¾ c milk
  • ½ tsp salt
  • ⅛ tsp pepper
  • 15 6" flour tortillas at room temperature
  • 1 c prepared salsa
  • 1 c shredded cheddar or Mexican blend cheese
Instructions
  1. In a large skillet over medium heat, cook the sausage until browned. Pour off any accumulated grease.
  2. Meanwhile, whisk the eggs, milk, salt and pepper until combined.
  3. Add to the sausage and cook for 5 minutes stirring the eggs to cook them evenly, but don\\'t brown them. Undercook just slightly - they'll continue to cook after you take them off the heat.
  4. Remove the pan from the heat and allow to cool slightly.
  5. Assembly
  6. Evenly distribute the sausage and egg mixture among tortillas. Top with salsa and cheese. Fold tightly into a burrito shape and wrap tightly in foil or plastic wrap (we use natural unwaxed bags which can go right into the microwave). Store the individually wrapped burritos inside a large gallon freezer bag and label for use within three months from today's date.

  8. Cook from frozen - 45 seconds to 1 minute in the microwave or 5-7 minutes at 350 F in a toaster oven.
