We’re filling our freezer with meals for Alex and La. Their first baby will be here soon and we want to make those first few months easier for them.
This sauce is one that can be used for so many different meals. This time, I’ve used half for chicken parmigiana (recipe coming soon) and baked pasta with sweet chicken sausage (also coming soon). It can also be used to make Spanish rice, lasagna, spaghetti, and any other recipe that calls for a red tomato sauce.
Easy No-Cook Pasta Sauce
I used Costco’s brand organic tomatoes, sauce, and paste so I’ve included the can sizes for them as well as the total quantity should you use a different brand or size.
- 48 oz tomato paste (8 6-oz cans Kirkland Organic Tomato Paste)
- 7 cups hot water
- 102 oz canned diced tomatoes (juice included - 7 14.5 oz cans Kirkland Organic)
- 105 oz tomato sauce (7 15-oz cans Kirkland Organic)
- ¾ c finely minced white or yellow onion
- ½ c finely minced green pepper (seeded)
- ¼ c finely minced garlic (approximately 12 cloves)
- 1 Tbl dried basil
- 1Tbl dried thyme
- 1Tbl dried oregano
- 2 Tbls salt
- ½ tsp pepper
- This makes approximately 38 cups of sauce so make sure your pan or bowl is large enough. I use a large stockpot.
- In a large stockpot, add the tomato paste. Slowly stir in the hot water until the sauce is smooth.
- Stir in the diced tomatoes and their juice, tomato sauce, onion, green pepper, garlic, basil and seasonings.
- Stir until well combined.
- Taste test by putting a few teaspoons into a microwave safe dish and microwave or 1 to 2 minutes. Add additional spices, onions, or garlic to taste if necessary to the pot and re-taste. Heating it is important, trying it cold won't give you its true flavor.
- Package in freezer bags, freezer containers, or use in recipes.
This is great! I never realized you could make a no cook sauce.
P.S. I also pinned this!
I routinely make my own sauce but I never thought to freeze some. How great to have some on hand to make spaghetti in a pinch!
This is the first time that i heard Not cooking sauce and it really looks interesting for me . I am going to bookmark this for my pasta
This looks amazing! I’ve never tried NOT cooking my sauce before. I have my red sauce recipe that is used for all my meals as well.
Now this is right up my alley! I’m making spaghetti tonight so I’ll let you know how it goes
I plan to do a ton of bulk cooking in a few months to prepare for when the baby arrives. I did that with my last baby and I found it was so helpful. My husband usually makes our pasta sauces but I think I’ll give it a try myself. This looks great.
I have been wanting to make my own sauce for some time now but never have actually gotten around to doing it. I am going to try your recipe out.
I would love to have a stash of this delicious sauce on hand. We make a lot of pasta and usually use a base sauce to build on. How great to have a stocked freezer of homemade sauce?!
We have been making our own pasta sauce for so long now, I can not remember the last time we purchased the bottled variety. Our recipe is quite similar to yours and I love the idea of making enough to freeze some!
I’ve been doing much better about freezing meals. I tend to make a bunch on the weekend, and save the rest for those busy weekday nights. Got to try this sauce!
My daughter has been saying she wants to do some bulk cooking so she will have food stores up when baby gets here. This looks like a great recipe because she loves pasta.
This sauce looks yummy and I like the idea of freezing it for later. This will be perfect to reheat on a busy weeknight.
I am from a big Italian family and we make out own sauce & freeze it. It’s a huge time saver.
