I’ve never really thought about it, but what constitutes a southern recipe? I’ve only driven through a few southern states on vacation, so my only knowledge about Southern food is what I’ve learned by watching cooking shows. It seems anything that’s breaded and fried is often claimed as being southern like the friend green tomatoes made famous in these parts by the movie named after them. But I know there has to be more to this American cuisine than hush puppies, grits, gumbo, and fried chicken.
I set off to find out more about Southern cooking and realized that I’ve made quite a few recipes that have roots in the south. My husband likes his beef stew topped with dumplings, he loves my chicken pot pie, and we both adore pecan pie. I grew up on chicken-fried steak, banana pudding with vanilla wafers, strawberry shortcake, and honey covered biscuits. I never thought about their origins, but it turns out we’ve been enjoying traditional southern comfort food for decades!
While I’ll never cook grits, collard greens, or catfish in my kitchen, I can bake with a nod to the south, and I’m going to be doing just that later today with a Martha White® baking mix from Fred Meyer (my local Kroger store- find your Kroger store here). They’re a quick way to make up a southern-inspired treat or meal. These high-quality baking mixes have been around for more than 100 years. Many require the addition of just a few ingredients to have fresh baked goods in no time.
There are plenty of Martha White® baking mixes from which to choose including two types of pizza crust and a variety of corn meal and muffin mixes. Prepare them as directed or try one of the Martha White® recipes which feature one of the baking mixes as an element in the recipe. Unfortunately, this far north there are only three muffin mixes available.
Since I’m new to the Martha White Mixes, I picked up several of the muffin mixes to experiment with. I”ll be spending the evening baking and can’t wait to share my results with you. I’ll be publishing my recipe tomorrow – don’t forget to come back and check it out!
