My husband works much too hard. I know every wife says that, but with him it’s true. I can’t get him to take a minute off to eat and most days he doesn’t eat until dinner, which can be as late as 8:30 pm. He deserves something beyond a basic sandwich so today I made him the sandwich that was so good I used to skip school for it. As often as we could, my girlfriend and I would sneak out during lunch and drive over to our local deli and buy a turkey, cheese, and apple sandwich with cranberry and walnut mayo. I think they called it the Sweet Bird, but it’s been over 30 years, so while I may have the name wrong, I have the flavors right.

This anything-but-basic sandwich starts with the best turkey available, Foster Farms All Natural Sliced Turkey Oven Roasted or Honey Roasted & Smoked. Both work equally well in this sandwich. To make sure my other ingredients lived up to the Foster Farm All Natural Sliced Turkey, I used creamy Havarti cheese, whole cranberry sauce, real mayonnaise, ground walnuts, organic whole grain bread, crisp leaf lettuce and a Granny Smith apple. All great ingredients on their own, but when combined they make a fabulous sandwich!
Turkey Havarti and Apple Sandwich with Cranberry & Walnut Mayo
Need more or less of the cranberry & walnut mayo? Just mix equal amounts of the three ingredients. Don’t have a food processor? Use a mortar and pestle or chop the walnuts with a knife for a chunkier mayo.
- Cranberry & Walnut Mayonnaise
- 6 Tbsp mayonnaise
- 6 Tbsp whole cranberry sauce
- 6 Tbsp walnuts, crushed
- Pepper
- 8 slices bread
- 8 slices Foster Farms Turkey
- 8 slices Havarti cheese
- 1 Golden Delicious Apple, thinly sliced
- leaf lettuce
- Prepare the cranberry & walnut mayonnaise early in the day or the day before.
- Whisk mayo, cranberry sauce, and walnuts. Pepper to taste.
- Refrigerate
- Assembly - spread the cranberry & walnut mayo on all slices of bread.
- Layer the turkey, cheese, apple and top with lettuce on half of the slices.
- Add the second piece of bread and enjoy!
- Refrigerate any leftover cranberry & walnut mayo for up to 5 days.
