We’re so busy this time of year that it’s really hard to take time to make something for lunch that’s quick and healthy. We’re always looking for fast fixes to get lunch ready in minutes, but we want it to be delicious and satisfying as well.
Hummus seems to be on every menu and at every party. What was once a dish popular with the granola and Birkenstock crowd, it’s not gone mainstream because of it’s a healthier alternative to the typical dips and spreads served. It’s the perfect additional to a light and healthy lunch as part of a salad, dip, or sandwich.
But most of the prepared hummus available in local supermarkets is full of fat, preservatives, and other chemicals which detracts from the flavor and health benefits. We don’t have time to make our own from scratch, but luckily we don’t have to because there’s a new reduced calorie brand available at grocery stores across the US.
Skinnygirl brand, famous for their low-calorie cocktails, has expanded to include more beverages and snacks including Skinnygirl Hummus. It’s available in four flavors – Roasted Red Pepper Hummus, Cilantro Jalapeno, Classic, and Roasted Garlic – and is all-natural, gluten-free, kosher, and reduced calorie hummus is made with non-fat Greek yogurt.

What some people may not realize is that before Bethenny Frankel became a household name, she was a vegan chef and competed to be Martha Stewart’s assistant. She’s known for her tasty, though low-calorie recipes. Creating this hummus for use at home in our own recipes seems a natural.
Skinnygirl Hummus: Goodbye Ranch!
We recently had a chance to try out her Roasted Red Pepper Hummus so we upgraded our usual working lunch and added napkins and flowers. It was nice to take 2-seconds out of our workday to make it pretty.
With no time to cook, we used a purchased veggie tray but we exchanged the ranch dressing provided with the Skinnygirl Roasted Red Pepper Hummus. Not only did we save calories, but it’s real food with no added chemicals, so nutritionally better for us. Have you looked at the ranch dressing ingredient list? It’s scary!
That little switch also meant our quick and easy lunch provided some protein to get us through to dinner, something the ranch dressing couldn’t provide.
How will we enjoy our leftover hummus? Next time we’ll make vegetarian lettuce wraps, but if you’re a meat eater, you could easily add cooked chicken or turkey as well. Or roll them into tortillas with thinly sliced veggies and they’re tough enough for leftovers or cut into small rounds for a light and fun appetizer.
The Skinnygirl Red Pepper Hummus as a small kick to it, so if you’re trying it with your kids for the first time you may want to try original. The texture is creamier than most processed hummus which is exactly how I like it.
