It’s the new year and with it comes the chance to turn over a new leaf; to make changes to better ourselves. This year my husband has decided it’s time to eat healthier. The thing is, “healthy” means different things, to different people. For my physically fit husband, it means eating less red meat and lowering his salt intake.
To help my husband accomplish his healthy eating resolution, I’m working on new recipes that feature chicken and grains, and working on adding herbs in the place of salt. This 30-minute chicken and rice soup is one of his new favorites and it’s so easy! It takes just a few ingredients that can be found in most pantries and tastes like it’s been simmered all day. In reality, it’s ready in no time at all thanks to my newest kitchen appliance, the electric pressure cooker.
The recipe is large enough for several meals so I pack the leftovers in my new CorningWare covered mugs which are freezer, dishwasher, oven, and microwave safe. That way my husband can enjoy the soup again for lunch or dinner.
Reheating is simple with the addition of the vented storage/cooking cover. These Corningware Color Pop Ins Mugs stack well in the refrigerator or freezer, and I’ve used them for everything from stew to scrambled eggs. He knows whatever is inside just needs a quick reheat and it’s ready to eat
- 2 Tbl olive oil
- 1 clove garlic, minced
- ½ small white onion, chopped
- 4-6 carrots, sliced
- 2-3 celery stalks, sliced
- 4 skinless, boneless chicken breasts cut into bite sized pieces
- 1-1/2 c rice (white, brown or long grain)
- 10 cups low salt chicken broth
- 1 bay leaf
- 1 tsp parsley
- In an electric pressure cooker on the browning mode, heat the oil. Add the onions and garlic, cook for about 2 minutes.
- Add the carrots, celery, and chicken. Cook until the chicken is lightly browned all over (14 minutes).
- Add the rice, cook stirring occasionally, for about 4 minutes.
- Add bay leaf and chicken broth.
- Lock lid in place and cook on HIGH pressure for 8 minutes. Use the natural release method; unlock lid and remove bay leaf.
- Check chicken - it should be cooked through (no pink).
