My Chopped Salad To-Go on Flat Out Hungry Girl Foldit Flatbread Sandwich Recipe

I’ve been doing well on my new eating plan. As of today I’ve lost 10 pounds! I have many, many more to go, but so far it’s been really easy. I’ll be sharing with you some of the things I’m doing in the next few days, but for today I want to share with you one of the sandwiches I’ve made that is both delicious and within my new healthy eating plan.

The base of this low calorie sandwich is a new Flatout Hungry Girl Foldit Flatbread. This particular one is flavored with Rosemary and Olive oil. I wanted to make a salad on-the-go, my answer to fast food, so I added fresh baby spinach and arugula leaves, a little bit of really good organic Feta cheese, some black olives (you can use whatever olives you prefer of course), some cherry tomatoes, cucumbers, and a wee bit of organic lite dressing. That’s it! Delicious and easy and packed with Vitamin A and potassium.

This is my low calorie vegetarian sandwich, but the other day I made a chicken, bacon, and spinach sandwich for the hubby. Check out that recipe as well if you’re a meat-eater.  This one can certainly be made for you meatatarians by adding flaked tuna or shredded chicken.

Ingredients
  • 2 Flat Out Hungry Girl Foldit - Rosemary and Olive Oil (cals 200)
  • 1 oz Feta Cheese, crumbled (cals 60)
  • ½ medium cucumber, thickly sliced or chopped (cals 23)
  • 6 cherry tomatoes, halved (cals 9)
  • 10 baby spinach leaves, washed (cals 5)
  • 10 arugula leaves, washed (cals 5)
  • 5 black olives, halved (cals 25)
  • 2 Tbls Lite Honey Mustard Dressing (cals 70)
Instructions
  1. Wash, dry, and prepare your vegetables. If your family doesn't like the very nutritious peel on left on the cucumber, use a lemon zester to remove some of the peel - it also adds some dark green to the sandwich and looks fun.
  2. Layer the ingredients on the sandwich. Top with dressing.
  3. Enjoy!
  4. Lunch tip: Make the sandwich ahead of time but pack the dressing in a separate container. Add just before eating.

What I like about the Flatout Hungry Girl Foldit Flatbread is that it can be used in so many ways. Cold or hot and for any meal – breakfast, lunch, and dinner. I’m going to try this next toasted with a bit of melted cheese or some scrambled eggs with vegetarian sausage. I’m just beginning to think of new ways to use the flatbread.  Plus they’re inexpensive. I paid $2.99 for 6 flatbreads at my local Walgreen store.
