I didn’t mean to let my holiday baking get behind this year. I promised myself this year I wouldn’t be out buying cookies on Christmas Eve, again. I even got a great start when I receive a fabulous basket of baking products from Safeway a few weeks ago. It arrived just after my son asked his girlfriend to marry him and just before the engagement party her mother invited us to.
I immediately whipped up the Red Velvet cupcake mix for the party since that my future daughter-in-laws favorite flavor. The cupcakes looked fabulous and I loved using special cupcake holders for the event; but in the excitement, I didn’t take a photo. I wasn’t worried, I figured I had so many other opportunities to share them with any of the other products included in the basket that I didn’t give it another thought.
But then life started getting in the way. First we had to make the decision to put our sweet pup down. We didn’t realize how much it would affect us both. And then the tragedy in CT happened and I sat immobilized for days unable to think about the coming holiday.
We decided we needed to get away for a few days and recoup so that’s what we did. We drove to the other side of the state to our favorite little town where we were sure we’d have snow. And snow it did!
We’ll be here a few days so I brought along some of that Safeway baking basket with me and the two of us got our holidays back on schedule by making brownie pops and listening the Christmas Carols. I didn’t need to bring much, just an 8”x 8” pan, some oil, non-stick spray, and an egg. Everything else is included in the kit.
It’s funny how the act of baking together can help set things right. Watching my husband roll the brownies from squares into balls made me smile. And he laughed when I licked the cup after dipping the balls. Those are the memories I want to remember from this holiday season.
I thank Safeway for the wonder basket of inspiration and I will be making up the rest of them when we get home.
