When my husband and I first met in 1979 he asked me if I could cook. I couldn’t, but there was no way I was going to lose this handsome fellow for that reason! He asked me to make him a cheesecake to take to work to share with the guys at the Fire Station. I had no clue how to make one but thankfully there was a boxed mix at the store so I used that.
Well, 20 years later I finally admitted to him that my “homemade” cheesecake which he loved and bragged about all those years ago was actually made by JELLO! I no longer “cheat” but he still prefers the taste of a no-bake cheesecake so this is my go-to recipe. It’s almost as easy as the mix. 🙂
No-Bake Lemon Raspberry Cheesecake Note: This recipe fits a 9″ tart pan with about ½″ deep filling. If you use a pie plate (like I accidently did, double the filling recipe for a fuller pie). Next time I’ll use 4 Inch Round Tart/Quiche Pan Set (6) for individual tarts. I noted this on my recipe by writing “dbl” only I couldn’t remember what I meant by it. 🙂 I also use this quite often in individual tasting glasses - just use 2tbl butter in the crust and spoon it into the bottom of the glasses (leave it loose) Yield: 6 Prep Time: Cooking Time: Total Time: Ingredients - CRUST Ingredients
- 8 graham crackers
- ¼ cup golden brown sugar, packed
- ¼ cup butter, melted
- FILLING Ingredients
- 8 oz cream cheese, softened
- ⅓ cup super fine baker’s sugar
- ½ cup + 2 tsp sour cream
- 2 tsp fresh lemon juice
- 1-1/2 tsp lemon zest
- ½ tsp vanilla extract
- TOPPING Ingredients
- 8 oz fresh raspberries (or as many as you like)
- ¼ cup seedless raspberry jam
Instructions - CRUST Directions:
- Preheat oven to 375°F.
- Grind the graham crackers and sugar in a food processor until crumbly
- Add the butter and process until crumbs are evenly moistened.
- Press the crumb mixture firmly onto bottom and up sides of a 8″ pie plate or tart pan with removable bottom (see note above about changes for a pie plate).
- Bake about 8 minutes or until the crust is firm to the touch by not browned.
- Cool crust on wire rack.
- FILLING Directions:
- With an electric mixer or food processor, beat the cream cheese and sugar until smooth.
- Add the sour cream, lemon juice, zest, and vanilla and beat until smooth and completely incorporated.
- Spread filling in cooled crust and chill approximately 4 hours or until firm.
- TOPPING Directions:
- Wash and blot dry the raspberries. Arranged them over the filling.
- In a small bowl, stir the jam to loosen up the consistency. If necessary, heat in microwave for 15 seconds.
- Drizzle the jam around the berries.

Now’s a great time to make cheesecake because both the sour cream and cream cheese were on sale! I shopped at Safeway because they have a fabulous deal right now that rewards you with tickets to see Ice Age, Continental Drift this summer after you purchase $40 in qualifying dairy items
Shopping for the dairy products was easy. First I went online to the Safeway.com site to check out the June Dairy specials and to load up my card with manufacturer coupons and my personalized deals. While I was in the store I looked for the specially marked products – I was surprised to find non-dairy items included as well like Simply Potatoes. You have the entire month of June to accumulate points so check your receipt to see how close you are. I was less than $1 away after this trip.
