Opa! It’s the word for joy and celebration in the Greek language and Old London wants to help you find a way to celebrate your health. They’ve teamed up with Chelsie Hightower, celebrity dancer, as well as a team of culinary and nutrition experts to help you incorporate the Opa spirit into your life.

Why the Greeks? Because they have a heritage of food, family, celebration, and balance. They participate in outdoor activities and rely on a healthy diet of grails, fish, dairy, and olive oil. And because they live in one of the most beautiful regions in the world, they get out and enjoy it by hiking, playing sports, and participating in water activities. The Greeks are also known for their love of dancing and it’s often part of their everyday life and especially so at celebrations and social gatherings.

So what does Chelsie Hightower recommend for healthy living?  Get outside and walk around the neighborhood, it may not be Greek ruins, but there’s something interesting in your local to get involved or interested in. Try a new park or change your current walking route. She also advocates making healthier meal choices and recommends a Mediterranean-influenced diet that’s rich in vegetables, fish, fruit dairy, and olive oil.  You can find recipes online including the Old London Facebook page.

Hightower also advocates being kind to yourself. Everyone needs some down time and a chance to feel settled. Do what makes you happy – take a bath, read a good book, exercise, etc.  Treat yourself with smart snacks like Greek yogurt, almonds, and Old London Melba Snacks with your favorite hummus or dip.

Celebrate like the Greeks. Hightower suggests you get out and go dancing with friends – you’ll have get a workout while you’re having fun and don’t wait for a special occasion to get together with friends and family. Put together an impromptu potluck where everyone contributes.  Hightower likes to set out easy appetizers like green and black olives, cheese, and Old London Melba Toast.

And Hightower’s final tip? “Love yourself. People come in all shapes and sizes, and what works on others won’t necessary work for you. Being healthy is about how you feel. Stop comparing yourself to others and begin loving the person you are from head to toe.”

My Favorite Old London Melba Toast Snack

So how do I like to eat Old London Melba snacks? Easy, with cream cheese, herbs, and lemon zest! It’s fast and easy and fancy enough for company but easy enough for a snack. You can also make it with ricotta cheese in place of the cream cheese.

RECIPE: Choose 2-3 fresh herbs and finely chop them – about 1 Tbls each (to taste of course – if you like one more than the other, by all means use more of it, just try to have about 3 Tbls fresh herbs). I used chives, dill, and rosemary. Mix the herbs together and set aside. To 3oz of cream cheese add 1 tsp lemon zest and 1 Tbls of the mixed herbs. Form the cheese into a small ball and roll the ball in the remaining herbs to cover. Serve with assorted Old London snacks. If substituting ricotta cheese, mix by hand and then refrigerate for a few hours. To serve, seed plum tomatoes and chop finely. Cover Old London Melba Toast with cheese mixture and top with chopped tomatoes. Serve immediately.
