Coffee-Spiced Grilled Chicken with Fruit-Basic Salsa Recipe

Recipe: Coffee-Spice Chicken & Fruit-Basil Salsa

Ingredients

Chicken

  • 2 Tbl instant coffee
  • 1 Tbl grated peeled fresh ginger
  • 1 Tbl olive oil
  • 1-1/4 tsp ground allspice
  • Salt
  • 8 skinless, boneless chicken breast halves (3 lb total)

Fruit-Basil Salsa

  • 3 cups watermelon, seedless and cubed into 1/2″ chunks (approx 4 lb watermelon)
  • 1 nectarine (large, ripe and pitted), cut into 1-2″ chunks
  • 3 Tbl red onion, finely chopped
  • 1 Tbl lemon juice, fresh
  • 1/2 cup basil leaves, fresh, coarsely chopped
  • 1/4 tsp salt
  • Fruit-Basil Salsa
  • In medium bowl, combine watermelon cubes, nectarine, red onion; and lemon juice.
  • Cover and refrigerate.
  • When ready to serve, stir in chopped basil leaves, and salt.
  • Makes 4 cups.

Instructions

Coffee-spiced Chicken

  1. Prepare grill – heat to medium
  2. In large bowl, with spoon or fingers, press coffee to pulverize. Add ginger, oil, allspice, and ½ teaspoon salt; stir to combine. Add chicken and toss to evenly coat with spice mixture (you may need to pat spice mixture onto chicken with fingers).
  3. Place chicken breasts on hot grill. Cover and cook 8 to 10 minutes, or until juices run clear when thickest part of chicken is pierced with tip of knife, turning once. Transfer chicken to cutting board and let rest 5 minutes.
  4. Slice chicken crosswise and serve with Fruit-Basil Salsa.

Fruit-Basil Salsa

  • In medium bowl, combine watermelon cubes, nectarine, red onion and lemon juice.
  • Cover and refrigerate.
  • When ready to serve, stir basil leaves ¼ teaspoon salt.
  • Makes 4 cups.
