Who doesn’t love dessert?  The Norwegian Cakes and Cookies cookbook from acclaimed Norwegian pastry chef, Sverre Sætre, is a book dedicated to delicious sweetness. Saetre has taken the essence of traditional Norwegian sweets and made them easy enough for the home cook to recreate.  He shares recipes for tarts, puddings, cakes, cookies, and more.

There is one full section dedicated to basic dessert recipes and useful tips for the beginner; but the expert cook will find them useful as well.  Recipes for tart and pie crusts, dark chocolate glaze, and vanilla custard – everything you need in your baking arsenal and the basis for branching out and creating some of your own fabulous concoctions.

But there are plenty of recipes included in the book for those less adventuresome.  They include a nut macaroon with apple cream, puff pastry sticks with brown sugar and cinnamon, loaf cake with carrots and nuts, caramelized apple cakes, cream puffs with chocolate cream, pears in Lingonberry syrup, troll cream with jellied cream, and so many more.

There are some unusual ingredients in the recipes and thankfully there are descriptions and information on what the ingredient is and where to find it. The book also includes over 50 photographs by photography Christian Brun so you’ll get some visual help and clues as well.

Sætre is a trained chef as well as pastry chef and he’s been a member of the Norwegian National Culinary Team since 2003. His first book, Chocolate: A New Insight into the World of Chocolate was written in 2008. Saetre won the award for best Norwegian cookbook in 2010 and is a popular TV Chef in Norway.  He owns a patisserie in Oslo.
