Make Frozen Macaroni and Cheese more fun with these vegetarian add-insOn one of the days I skipped posting my food diary, I had my doctored frozen mac and cheese. I’ll share it with you today since I didn’t get the chance.  Anyway, I keep a few Lean Cuisines in the freezer for days when I’m just too hungry to think about cooking, or I’m out of anything I feel like eating.  But instead of eating the mac & cheese out of the sad little plastic container,  I like to add a few goodies to it to make it more like my homemade version.  I add chopped tomatoes, garlic, olives, and parsley.  I make the mac first and then add the goodies and recook it for a minute or two and viola, mac and cheese for grown ups!

Someone asked me what food I missed the most. I can honestly say I only miss one thing – nuts!  I LOVE nuts but I hate how many points they take.  I try to weigh the healthy oil they provide against the total points, but it’s still hard to give up 6 points for 1oz of nuts.  How much is 1oz?  A handful!  As you can see, I needed more than an ounce today to satisfy my craving on this day.  Darn it, I love pecans!  I miss peanuts, almonds, walnuts, and pecans.  Now I see I was eating way too many of them, but I’m going to morn them for a few minutes 🙂
I tried some new chips – Garden of Eatin’ Multigrain Sea Salt Tortilla Chips. I like them but they’re not really tortilla chips in my mind.  They’re dense (which means fewer go into that 1 once I get) but they’ve got a great, grainy taste.  They’re more like a multi-grain cracker than a tortilla chip.  I think some cheese would be good on them.
