Homemade Pico de Gallo and Natural Gringo Chips

I discovered Vans Organic Whole Wheat Blueberry Waffles. Oh my they’re good!  And at 6 WWPP’s for two, they’re pretty heavenly. Not only are they whole wheat, but they have REAL blueberries in them (not blueberry flavored bits).  I had mine with organic butter and syrup.  I try not to eat “fake” foods so no margarine or other “spread”.  I’d rather have one tsp of real than a tablespoon of chemicals.  Nothing can replicate the taste of real butter! I feel the same way about syrup. I use O Organics Grade A Dark Amber 100% Pure Maple Syrup (from the Safeway family of stores).  It’s more expensive than maple-flavored syrup because it’s real.  I only need a bit for great maple taste!  Three WWPP for 1/8 of a cup which was plenty for the two waffles.

My huge accidental splurge for the day was a cup of Horizon Organic Dha Omega-3 1% Chocolate Milk. My husband mistakenly bought it when he meant to pick up light Soy chocolate milk.  The difference in calories between the two for a 1-cup serving is 100 calories!  It usually costs me 3 points for Chocolate Soy, this chocolate milk set me back 5!  Yikes!  I’ve called my oldest to come pick it up along with the 5 boxes of General Mills cereal I received  – I stopped eating cereal with artificial colors and flavors, he hasn’t.

I also did 55 minutes on my bike for the first time! 257 calories burned cycling – time 55, avg speed 14.96, avg rpm 80 , dist 12.21; rpm 80 avg and I did some band exercises.  Not a bad day!
