Faux sausage and vegetables scrambled eggs

My favorite meal of the day by far was my omelet turned scrambled eggs that I had for dinner. I know, I eat completely backwards – breakfast foods for dinner and dinner for breakfast.  I didn’t do this before I started tracking what I ate.  I’m not sure what’s causing it, but so far I’m not minding.

The omelet/scrambled eggs were delicious! Next time I’ll use one egg and one egg white to make them a little lighter, but as made, they were only 10 points and so filling!  I also used water instead of milk and used Pam’s organic olive oil spray in the pan instead of butter.  Sorry there’s no finished picture – they weren’t pretty, but they were fabulous!  Next time I won’t try to make an omelet – I’ll go right for the scrambled eggs with veggies.

My bowl of melons - watermelon, cantaloupe, and honeydewFor lunch I had my favorite Late July peanut butter crackers and a nice medley of watermelon, honeydew, and cantaloupe. These fruits are all high in water content and low in calories.  Plus, they’re cool and refreshing with a nice crunch!

It’s hard to believe that two weeks ago I got ZERO exercise. Zero, I’m not exaggerating.  And today, I rode my recumbent bike for 50 minutes with and average MPH 17  for a total miles 13!  I’m hoping all of this bike time helps me when I’m in Walt Disney World in two weeks.  I want to be able to keep up with my “kids”.  Tracking and posting it keeps me honest – same with food.  Not one thing has gone into my mouth that hasn’t been posted here.  I’ve NEVER tracked this long before and I drank my daily allotment of water – first time!
