Potato Salad for breakfast? Yes! Weight Watchers PlusPoints - 7

It wasn’t too bad of a weekend. I stayed on plan although I did make some bad choices – like the potato chips, but hey, I ate 14 at a time instead of half a bag, so I call that a win! The hubby worked a 36-hour shift so I was left to my own devices so yes, I did eat potato salad for dinner one night and breakfast the next morning. It was soooooo good!

I did ride my recumbent bike both days and I upped the resistance,  but I’m really looking forward to the exercise ball I ordered. It should arrive sometime this week.  I need a change!  I am actually proud of myself for staying with the bike.  There are some days I just want to jump off, but so far I haven’t!

I didn’t get any of the baking and cooking for myself I’d hope to this weekend. I spent the entire time cooking 12-organic chickens from Whole Foods.  My mom was told they were fresh so she was going to have me freeze them raw.  Unfortunately, the sales person was wrong, they’d been frozen.

So, I baked, boiled, and grilled them – anything to make my hubby and mother not get tired of chicken too quickly. I’ll use some of the chicken that I boiled and removed from the bone to make chicken enchilada bake (I’ll post the recipe) and chicken pot pie (mom is a master crust maker) and the grilled went straight into the freezer.  The hubby just grabs it on his way out the door to work and reheats for lunch and dinner at the station.  I complained about the chickens a lot because we never intended to have to deal with them all at once.  So much for a great deal and saving money 🙂

Here’s my food diary for the weekend – oh, notice the cheesecake? Hubby went to his father’s 86th birthday party and brought it back for me. I didn’t attend because I have a cold and didn’t want to risk sharing it with anyone.  Anyway, I thought about that cheesecake for almost 2 hours waiting for him to arrive with it.  Funny thing, by the time I got it and took a bite and I realized the anticipation was much better than actually getting it. Trust me, it was amazing, just not enough for me to want to go over my daily point for more than a bite.  I saved it, we’ll see if I need another bite tomorrow!
