Classic Egg, Bacon & Cheese on a Thomas' Bagel Thin

We love Thomas’® Bagel Thins™ at our house! The Everything bagel is fabulous and what I love about them is they’re thin.  They’re perfect for breakfast and I’ve used them several times in OAMC for my husband.  I load them up with scrambled eggs, bacon or sausage, and cheese and wrap them individually.  He grabs one from the freezer and pops it in the microwave and he enjoys it on his way to work.

Thomas’® Bagel Thins™ do not contain high fructose corn syrup nor do they use any artificial sweeteners – I love that! My one wish is that they’ll offer an organic version someday.  Do they taste like NY deli bagels?  Nope, but for me that’s why I like them. I don’t like all that dough – these are thin, like cutting off the top and the bottom of the bagel and tossing the middle.  Perfect!

Easy Cheesy Eggwich

Ingredients:

  • 1 Everything Thomas’® Bagel Thins™ bagel
  • 1 hard boiled omega-3 fortified egg
  • 2 slices reduced fat cheddar cheese
  • 1/4 teaspoon dried basil

Directions:

  1. Toast the Bagel Thins™ bagel.
  2. Peel and slice egg.
  3. Layer cheese slices and egg, then sprinkle with basil.

Yield: 1 sandwich
Prep Time: 5 minutes
Cook Time: 0 (does not include boiling egg)

Ingredients:

  • 1 Cinnamon Raisin Thomas’®  Bagel Thins™ bagel
  • 2 tablespoons almond, cashew or peanut butter
  • ¼ cup thinly sliced banana (about 1/3 banana)
  • Dash ground cinnamon
  • 1/2 teaspoon honey (optional)

Directions:

  1. Toast the Bagel Thins™ bagel.
  2. Spread almond butter and top with banana.
  3. Sprinkle cinnamon.
  4. If desired, lightly drizzle with honey.

Veggie Scramble Sandwich

Ingredients:

  • 1 100% Whole Wheat Thomas’®  Bagel Thins™ bagel
  • 1 teaspoon olive oil
  • 1 omega-3 fortified egg (or 2 egg whites)
  • 1 tablespoon mushrooms, chopped
  • 1 tablespoon red peppers, chopped
  • 1 tablespoon onions, chopped
  • Hot sauce, to taste

Directions:

  1. Toast the Bagel Thins™ bagel.
  2. Heat oil in large non-stick skillet over medium heat.
  3. In mixing bowl, whisk egg. Add veggies.
  4. Pour egg and veggie combo over skillet and tilt skillet to distribute evenly. Cook until egg is set, and fold in half twice, to fit Bagel Thins™ bagel.
  5. Remove from heat and place on bagel. Top with hot sauce, to taste.

Yield: 1 sandwich
