My Weight Watchers meals from today

Today was surprisingly easy. I ended the day with tons of points left over and yet I was never hungry and felt like I was eating at the end because it said I had points left.  This is especially strange since yesterday I couldn’t stop eating!  I tried a few new things today. One was Weight Watchers Smart Ones Morning Express English Muffin Sandwich w/egg whites & cheese.  It was delicious, but I pulled it apart and toasted the muffin and heated the egg in the microwave.  I’ll only use these occasionally because like all of their prepared food, it has way too many additives and extra creepy ingredients.

Marinating tofu for stir-fryI still need to go shopping and purchase items to create some freezer recipes so I have go-to food available in the freezer and depend less on pre-made, processed foods. I’ve discovered that I eat way too many nuts and that pasta dishes like macaroni and cheese take way too many points since it’s not one of my favs.  I’m learning a lot about the food I eat through this plan and I love that.

I did press some tofu and have it marinating in a homemade sauce of garlic, soy sauce, sugar, and fresh ginger. I’m going to stir fry it tomorrow with veggies.  I also pre-measured some snacks so I can grab and go without having to worry about serving size.

I rode my bike during the Grammy’s tonight. The hubby and I dug up an old TV out of the garage and hooked it up just in time to catch some of my favorite acts.  I’ll be sharing my bike and entertainment set up with you later today or tomorrow.  I also used my Groupon to Barnes and Noble to purchase an exercise ball and DVD.  I’m looking forward to having something to change up the bike with.

*Hickory Farms Smoked Cheddar Blend – every time I eat this I think someones snuck some bacon in my food!  It adds the most wonderful smoky taste and really punched up the spinach salad I had today.

**Soy Dream Lil’ Dreamers Dessert Sandwiches – Hubby bought these as a treat for me.  They’re organic, non-dairy, lactose free and cholesterol free, with no trans fat. Mmmmmmmmmm……good stuff.
