I LOVE peanut butter for breakfast  – it’s the plant-based protein punch I need to get my day started. My favorite weekday breakfast starts with an organic frozen waffle toasted until crispy and then spread with organic peanut butter while still hot so it melts into the waffle. I then add a squiggle of warm organic maple syrup and fresh blueberries. Oh my, I can’t tell you how delicious this is. Just thinking about it has me ready to go pop a waffle into the toaster oven to enjoy it for dinner.

Peanut Butter and Banana Stuffed French Toast

When I have a little more time, I like to make organic French Toast and serve it with a layer of sliced bananas, peanut butter, and maple syrup. Sometimes I change it up and put a fried egg in place of the banana. There’s something about the salty and sweet tastes meeting that I can’t resist it.

I also like to have celery sticks, apple slices, or a banana with peanut butter for breakfast, lunch, or dinner. I’ve also been known to eat a spoonful of peanut butter right from the jar when the late at night hit.  When I travel I take peanut butter and crackers along in case their aren’t vegetarian options available – they can be enjoyed in place of any mean and the taste of ground peanuts with their light and natural sweetness works every time to keep me satisfied.

Did you know that September is National Breakfast Month? I didn’t, but it makes sense because it’s a great time to remind parents to fuel their kids for their day at school with proper nutrition. Peanut Butter is one ingredient that can help make that happen. It provides protein, fiber, and good fats that can help to keep your little one fueled until lunchtime and it can do to the same for you.
