The Oven Baked Zucchini Chips from Skinny Ms is on the most pinned recipe list for the second week!  Her recipe is pretty simple and uses ingredients that are easy to find in most grocery stores. She combines a large zucchini which is cut thinly with panko breadcrumbs, grated parmesan cheese, salt, pepper, garlic powder, cayenne pepper, and low fat milk to make these crunchy snacks.

New on the list this week in the Banoffee Pie recipe from Epicurious. I’ve seen a slew of Banoffee recipes and I have no clue what Banoffee is. Turns out it’s an English dessert made with bananas, cream, and dulce de leche (made from boiled condensed milk) with a crust made from crumbled cookies (or biscuits as the English call them) and butter. Some versions include  chocolate or mocha flavors. The word “banoffee” is made by putting together “toffee” and “banana.”

I’m not a milk caramel fan – I prefer caramel made with butter so I’m not sure a banoffee pie is in my future. What about you? Are you a butter toffee or milk toffee fan?
