Brown Rice Triscuits Tomato and Sweet Basil Veggie CaviarWhen I became a vegetarian about 15 years ago I became a label reader. It’s amazing the things you’ll find animal products in that you’d never guess. It’s because of my label reading that I found out that my Triscuits, one of my favorite snack crackers, is vegan!

Since discovering this, they’ve been on my menu for most every party in one way or another. My favorite Triscuit topping is cocktail sauce and cream cheese (with shrimp added for my meat-loving hubby).

Brown Rice Triscuits

As flavored Triscuits started hitting the market, I think I tried every one, but recently they added a whole new line with interesting ingredients like sweet potatoes, brown rice, and red beans. So of course I had to try them!

But, I wanted to have them on the 4th of July so I wanted to come up with a seasonal and fresh topping that brings out the flavor of the cracker. First I sent my husband to the store for a box – they had all five of the new flavors: Brown Rice Triscuit with Tomato & Sweet Basil; Brown Rice Triscuit baked with Red Bean seasoned with Roasted Red Pepper; Brown Rice Triscuit seasoned with Sea Salt & Black Pepper; Brown Rice Triscuit baked with Red Bean seasoned, with Savory Red Bean and Brown Rice Triscuit baked with Sweet Potato seasoned with Roasted Sweet Onion.

I had him pick up the Tomato and Sweet Basil brown rice Triscuits variety because at that moment it seemed the most intriguing. Before even tasting them, I knew I wanted something creamy, something acidic, and something a little sweet so I asked him to buy cream cheese, green onions, and Roma tomatoes. To that I’d be adding balsamic vinegar I have on hand as well as fresh basil.

As soon as he brought the box in I took a taste. SO GOOD! Even without any topping they were flavorful and of course crunchy. But with the fresh veggie and herb topping they were even better.

Here’s my quick and easy veggie caviar Triscuit topping.

Veggie Caviar on Tomato and Sweet Basil Brown Rice Triscuit
  • Brown Rice Triscuit - Tomato and Sweet Basil Flavor
  • 2 Roma tomatoes - seeded and very finely chopped
  • ¼ cup black olives - finely chopped
  • 2 green onions - finely chopped
  • 2 tbls fresh basil - finely chopped
  • 1 tbls balsamic vinegar
  • ½ cup cream cheese
  1. Combine all the finely chopped vegetables, herbs, and olives in a small bowl. Add balsamic vinegar. Stir to combine. Refrigerate 30-60 minutes so the flavors have a chance to develop.
  3. Place a smear of cream cheese on each Triscuit and top with veggie caviar. Enjoy immediately.
