White and Semi-Sweet Chocolate Chunk Small-Batch Cookie Recipe
Our family keeps shrinking and traditional cookies recipes make way more cookies that we can and should be eating. Yes, we could send them to work or the neighbors, but rather than tempt fate and our waistlines, I’m concentrating on making smaller batches. This is a half-recipe of 2-chocolate chocolate chunk cookies that make 24, more than enough for us and still some to share. Use good-quality chocolate for the best results. Same with the butter and flour – use fresh ingredients and you’ll get a better cookie. Mix in nuts, chocolate covered raisins, or similar goodies to make them even more special. Use the freshest ingredients possible and real butter. If you use salted butter, decrease the salt in the recipe to ¼ tsp. Delicious and chewy on the edges and moist in the middle.

Ingredients
  • 1 c plus 2 TBL all-purpose flour
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ cup unsalted butter, softened
  • 6 TBL brown sugar, firmly packed
  • 6 TBL granulated sugar
  • ¾ tsp vanilla extract
  • 1 large egg
  • ¾ c white chocolate chunks
  • ¾ c semi-sweet chocolate chunks
  • ½ c nuts (pecans or walnuts) – optional
Instructions
  1. Preheat oven to 375 degrees
  2. In small bowl, mix flour, salt, and baking soda – set aside
  3. In mixing bowl cream butter, brown sugar, and granulated sugar until combined.
  4. Add vanilla extract and egg and beat until completely mixed and light and fluffy.
  5. Add the flour mixture and mix on low only until incorporated (don’t over mix).
  6. Hand stir in chocolate pieces and optional nuts.
  7. Form 1″ balls and place 2″ apart on cookie sheets
  8. Bake 8-12 minutes or until lightly browned
