I LOVE Old London Melba Toast but I honestly haven’t thought of them much. Back in the 70’s they were THE diet food. I distinctly remember snitching them from the kitchen. I’m not sure why I stopped buying them. Maybe because in my mind they equated dieting. But, I’ve recently become reacquainted with them and found that they’re just as delicious as I remember them! Plus, there’s more than just the toast I remember. Now there are flavored Melba snacks, too.
Back when I ate meat my favorite way to enjoy them was with tuna salad on them…..mmmm…..now I love egg salad on them or a slice of cheese and a cherry tomato (slice it in half so it doesn’t roll off). I’ve been checking out the recipes on the Old London page and I’m definitely going to be making a few of them, they’re much more inventive than my meager combinations.

I’m really excited to have rediscovered this old friend. Because they’re so low in calories I’ll be adding the Whole Grain Melba Snacks to my diet. They’re the perfect way to enjoy some great fresh fruits and vegetables and they add a fabulous crunch!
